She is one of my favorite competitor, last year at world barista chamipnship 2018 she didn’t get into final because an accident, her espresso shot for milk beverages was forget to tamp, she still continue the competition profesionally, but i think she still lost the point for attention to detail, so i think she did’nt trough the final because of that.

This year she was amazing, done very well. She set the stages very unusual, the judges sit on the table to make them more comfort as a customer.

She talk about sugar. Define the sweetnes and body for coffee by four type of sugar, monosaccharide, disaccharide, oligosaccharide, and polysaccharide. Her idea to enhance the sweetness with focus on this point. She using Sidra varietal coffee from La Palma Y El Tucan. Her idea, routine, and amazing team, made her a champion this year, congrats joo yeon.
