Ingredients for 32 cookies:
• 3 tbsp Cocoa Powder
• 2 tbsp Espresso
• 1 Egg Yolk
• 120g/3/4 Cups All-Purpose Flour
• 25g/ 3 tbsp Cornstarch
• 75g/ 1/3 Cup Unsalted Butter, room temperature
• 70g/ 2/3 Cup Confectioners’ Sugar
Step 1
Mix in a bowl the dry ingredients: 120g all-purpose flour with 3 tablespoons cocoa powder and 25g cornstarch. Combine them and set aside.
Step 2
In another bowl whisk together 75g room temperature unsalted butter with 70g powder sugar until creamy. Add 1 egg yolk and continue whisking. The next step is to add the most important ingredient: 2 tablespoons of espresso. Using a spatula, stir until well combined.
Step 3
Now, incorporate the dry ingredients in 2 batches. Use your hands to form the cookie batter. Transfer it on a working surface, roll it and cut it in small pieces. In order to have similar cookies, each piece should have around 9g.
Step 4
Now, form the coffee beans. Using your palms, mold them gently into ovals. With these measurements, you will have around 32 coffee bean cookies. Using a spatula or a toothpick, press them gently along the diameter of the oval.
Step 5
Bake them at 175°C for about 14 minutes. Remove them from the oven and let them cool completely before serving! Bon appetit!
