Ingredients required for making this coffee trifle pudding – Serves 12 to 14
For making the coffee custard (link for coffee custard recipe is given below)–
* cold milk – 1 litre (4 cups) , 3 & ½ cups for making custard, ½ cup for mixing with cornflour(cornstarch).
* Instant coffee powder – 2 tablespoons
* Sugar – ½ cup, Please taste your custard and adjust the sweetness according to your desired level.
* pinch of salt (just a tiny pinch)
* cornflour (also known as cornstarch) – 4 tablespoons
For layering the trifle pudding —
* 2 one pound cakes. You can use any plain cake, pound cake, sponge cake. Do not use any cake that has any complex flavorings in it. This recipe goes best with any regular plain cake.
* heavy whipping cream – 1 pint / 473 ml
* cocoa powder – as required
* instant coffee powder to be added in whipped cream – 1 & 1/2 teaspoons. Crush the coffee powder well if the granules are too large.
* confectioners sugar/icing sugar/fine granulated sugar – 3 tablespoons
Method for making coffee trifle pudding-
* Make the coffee custard (link for coffee custard recipe given below)
* Let the coffee custard cool down completely. Stir it from time to time to prevent any layer forming on top.
* Before whipping cream put the mixing bowl and beaters in the fridge for about 2 hours or in the freezer for 20 minutes. You cream should be chilled before whipping. All this will help to whip up the cream fast.
* Whip the cream to soft peaks
* Add a little portion of the soft whipped cream to the custard. Make sure your custard has cooled down completely before adding the cream.
* Whip the rest of the cream to stiff peaks. Do not over beat the cream
* Take a bowl. Line the bottom with cake slices.
* spread the custard on top of the cake
* Dust cocoa powder all over
* repeat the layers
* Do not dust cocoa powder on the top most layer of custard
* spread out or pipe out whipped cream on top
* Dust cocoa powder on top
* Maraschino cherries (to decorate on top) – totally optional
* Keep in refrigerator. You can make this two days ahead before guests arrive. It stays good for 3 to 4 days in the fridge.
