NB: Refrigerate overnight to allow biscuits to soften and take on a cake-like texture.

250g Cream Cheese

1/2 Cup granulated Sugar
2 Teaspoons Vanilla
1/2 Shot Coffee
300mL Whipping Cream
Arnott’s Kingston Biscuits (OR any biscuit you enjoy eating with coffee)
Drinking Chocolate or Cocoa Powder for Dusting
1/3 Cup Melted Dark Chocolate for Coffee Beans

RUDOLPH CHOCOLATE MOUSSE DESSERT CUPS: Makes 12

GOLD CHOCOLATE ACCENTS:
Melted Dark Chocolate or Nestle Dark Chocolate Baker’s Melts
Edible Lustre Dust
Edible Crispy Pearls

CHOCOLATE MOUSSE:
250g Nestle Dark Chocolate Baker’s Melts
100mL + 600mL Thickened Cream
(make ganache mousse base with the 250g chocolate + 100ml Cream)

WHIPPED GANACHE TOPPING:
400g Whipping Cream
200g Nestle Dark Chocolate Baker’s Melts
