Sponge cake
1/3 cup + 1 tablespoon almond flour
1 large egg + 1 egg yolk
2 tablespoons butter softened
1/2 tsp vanilla
Pinch of salt
2 tablespoon Truvia or granulated sweetener of choice
1/4 tsp instant coffee crystals
Liquid stevia to taste (15 to 20 drops)
Bake at 350 degrees for 15 to 20 minutes then cool and refrigerate wrapped in plastic until ready to assemble dessert. I recommend at least 15 minutes in the freezer
Coffee to soak sponges
3/4 cup hot coffee freshly brewed or
Same amount of water and 1 packet or serving of instant coffee granules
1 tablespoon coffee liquor (Kahlua) optional
Set aside to cool while making the filling
Ingredients for filling
1/2 cup heavy whipping cream
2 tablespoon powdered erythritol
1/4 tsp vanilla
Liquid stevia to taste 10 to 15 drops
Cocoa Powder (unsweetened) to dust between layers and top of each Tiramisu
Whip cream with the vanilla, erythritol and stevia until soft peaks and set aside
In a separate bowl combine 4 ounces cream cheese or mascarpone cheese with 1 tablespoon powdered erythritol, 1/4 tsp vanilla and 6 to 10 drops liquid stevia to taste
Add this mixture to the whipped cream mixture and this is the filling.
